Apple Dumplings

This is a very easy recipe, that you can either make the day before, or make extra and microwave the next day. Doubles as a great dessert and breakfast!!

4 Baking Apples pared and cored
1/2 cup sugar
1/2 tsp cinnamon
1/2 cup all purpose flour
1/4 tsp baking powder
1/8 tsp salt
1 egg slightly beaten
4 tsp melted butter (or margarine)
1 tsp vanilla

Prepare apples , butter 4 custard cups large enough to set apples in.
Mix 1/4 cup of sugar with cinnamon. Roll apples in sugar/cinnamon mixture. Place into custard cups. Sprinkle remaining sugar/cinnamon mixture over apples.
Stir together 1/4 cup of sugar,flour,baking powder and salt. Mix egg,butter and vanilla togther. Stir into dry ingredients.
Spoon batter evenly over apples.

Bake 375 until crust is golden and apples are cooked. Apprx 35-40 minutes depending on oven.

TIP: Good served hot with icre cream.
