Apple Ginger Cake

2½ Cups All-purpose Flour
1 Tsp Baking Soda
4 Tsp Ground Ginger
1 Tsp Cinnamon
¼ Tsp Each: Ground Cloves & Nutmeg
1/3 Cup Margarine
1 Cup Brown Sugar
2/3 Cup Fancy Molasses
¼ Cup Unsweetened Applesauce
1 Egg
1 Cup Buttermilk
1 Apple, Peeled, Cored & Chopped

Preheat Oven To 350°f & Using Non-stick Cooking Spray, Coat A 10-cup Bundt Pan.

In A Medium Bowl, Combine The Flours With Baking Soda & Spices Until Well Mixed.

In A Large Bowl, Beat Margarine With Sugar Then Molasses, Applesauce & Egg Until Well Blended. On Low Speed, Alternately Beat In Flour Mixture & Buttermilk In 3 Additions, Ending With Flour. Scrape Down Sides When Needed. Mixture May Appear Slightly Curdled.

Fold In Apple. Scrape Batter Into Prepared Pan & Smooth Top. Bake In Centre Of Preheated Oven Until A Toothpick Inserted Into Centre Of Cake Comes Out Clean, 45 - 50 Minutes. Cool In Pan 10 Minutes. Run A Knife Around Edge Of Cake Then Turn Cake Out Onto A Cooling Rack.
