Apple Streudel Muffins (+ review)

Hubby and I just made these. They are really really good; very moist and tasty. Definitely a keeper in this house. Hubby says that I don’t have to move to my mother’s now! :lol: :lol: I changed some ingredients from the original recipe and added some other ingredients. (i.e. instead of white sugar, I used honey and brown sugar) I set my timer for 18 minutes and they were done; so check them after 15 minutes. I made 17 muffins instead of 12. I thought 2 cups apples would be way too much when I was filling the pan; but once cooked, it wasn’t - was just right! I had 4 of those little restaurant containers of apple sauce that I added (estimate it to be 1/4 cup).

Apple Strudel Muffins

2 cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
2 tsp cinnamon
¼ tsp nutmeg
½ tsp salt
½ cup butter
¼ cup applesauce
1/3 cup honey
½ cup brown sugar
2 eggs
1-¼ tsp vanilla
2 cups chopped apples

1/3 cup packed brown sugar
1 tbsp all-purpose flour
¾ tsp ground cinnamon
1 tbsp butter

Preheat oven to 375 degrees F (190 degrees C). Put paper liners in 12-cup muffin pan.

In medium bowl, mix flour, baking powder, baking soda and salt.

In large bowl, beat together butter, honey, apple sauce, sugar and eggs until smooth. Mix in vanilla. Gradually blend in flour mixture and mix just to combine, reserving a little flour to coat apples so that they don’t sink to bottom of muffin; fold in apples. Spoon mixture into prepared muffin pan.

In small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.

Bake 15-18 minutes in preheated oven, or until a toothpick inserted in center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.

It would be nice to see the original recipe and not and estimate on one of the ingredients
