ASPARAGUS SOUP
1Lb Asparagus- washed, trimmed, & cut into short lengths
2C Chicken Broth or stock
½ Lemon
1 small Onion peeled
2Tbs Butter or Margarine
2Tbs Flour
1 dash of Nutmeg (optional)
- Cook in broth until tender
- Meanwhile-cut off (Zest) thin outer portion of the Lemon peel, cut the white portion of the peel and discard. Quarter and seed Lemon and grate in food processor or blender.
- Add the Onion to the lemon and chop finely
- Melt the butter or Margarine and add Lemon/Onion mix- sauté briefly
- Stir in Flour and cook until bubbly
- Pour Asparagus and broth into food processor or blender and blend until smooth
- Pour pureed Asparagus into saucepan with the flour-lemon mixture and cook until smooth and thickened
- Sprinkle Nutmeg over servings (Optional)
