Asparagus soup


1Lb Asparagus- washed, trimmed, & cut into short lengths
2C Chicken Broth or stock
½ Lemon
1 small Onion peeled
2Tbs Butter or Margarine
2Tbs Flour
1 dash of Nutmeg (optional)

  1. Cook in broth until tender
  2. Meanwhile-cut off (Zest) thin outer portion of the Lemon peel, cut the white portion of the peel and discard. Quarter and seed Lemon and grate in food processor or blender.
  3. Add the Onion to the lemon and chop finely
  4. Melt the butter or Margarine and add Lemon/Onion mix- sauté briefly
  5. Stir in Flour and cook until bubbly
  6. Pour Asparagus and broth into food processor or blender and blend until smooth
  7. Pour pureed Asparagus into saucepan with the flour-lemon mixture and cook until smooth and thickened
  8. Sprinkle Nutmeg over servings (Optional)
