Aunt Mickey's Chili

This is what we are having tonight for dinner. I made it yesterday and it tastes better today, all good chili’s do. This chili is easy on the stomach and kids love it because it has no harsh ingredients.

1 small onion (chopped fine)
1/2 medium green pepper (chopped fine)
1 tablespoon olive oil
1 pound lean hamburger (preferably grass fed, no hormones etc)
1 large can of tomato juice (46 ounce)
1 large can Campbell’s Pork n Beans (3lb 5 oz)
1/2 to 1 teaspoon cayenne pepper (add this to taste)

In a large pot saute the onion and green pepper in the olive oil. Add the hamburger and fry until well done. Strain hamburger to remove excess grease. Return to pot and add the tomato juice, beans and pepper. Mix well. Simmer over low heat about 4 hours, stirring frequently. It’s better if you make it the day before.
