Avocado soup with marinated crawfish tails

Fresh and spicy cold appetizer soup with crawfish tails. The soup is quick to make in a blender.

Soup

2 avocados
4 cups cold chicken broth
1 clove garlic
3 tablespoons lemon juice
salt
white pepper

Peel and pit the avocados. Mix avocado with chicken broth, garlic and lemon juice to a smooth soup. Add salt and pepper. Set in the refrigerator.

Marinade

½ cup olive oil
1 clove garlic
1 tablespoon finely chopped dill
2 tablespoons finely chopped basil
100g crawfish tails

Mix olive oil, garlic, dill and basil. Let crawfish tails lie in the marinade for at least an hour before serving.

Serve the soup topped with marinated crawfish tails and drip some marinade on all sides.
