Bacon, Lettuce, Potatoes and Oreo Pie

By my daughter’s request, we are having bacon sandwiches tonight with a side salad. We are also having potatoes. Wash potatoes, leave the skins on and slice. Spray each side with cooking spray. Put them into a baggie (a few at a time) with dry ranch salad dressing mix and shake to coat. Put onto a sprayed baking sheet in a single layer. Bake at 400F for 45 min. or until golden brown. The original recipe calls for oil but I am trying it with the cooking spray to cut down on the fat. We are then having an oreo pudding pie (left over from last night!) for dessert. For the pie, Mix 2 cups milk with 1 large box chocolate pudding. Spread 1 1/2 cups of pudding into an oreo pie shell (or make an oreo pie shell by combining 1 1/2 cups crushed oreos with 1/4 cup butter, press into pie dish and bake at 350F for 8-10 min.). Then cut 10 oreos in half (so that they are half circle shaped) and put on top of pudding in crust. Then mix 1 1/2 cups cool whip or whipped whipping cream with remaining pudding and spread on top of oreos. Chill 3 hours and serve with additional cream and oreoes to garnish. The kids loved this pie. There won’t be enough left over for everyone tonight!
