Bagels

Bagels

1/2 cup oil
2 cups water
2 cups matzah meal
1/4 tsp salt
1-2 Tbsp sugar
5 eggs

Bring oil & water to a boil. Add matzah meal, salt and sugar. Remove from heat. Stir until liquid is absorbed. Cover, and let stand until cool. Add eggs, 1 at a time, beating after each addition. Beat until light and fluffy. Drop from a tablespoon onto a lightly greased pan or cookie sheet. Make a hole in the center of each one. Sprinkle with sugar & cinnamon (or any spices you like.) Bake at 400 degrees for 50-60 minutes or untily lightly browned. Makes one dozen bagels.

Another Version of a TNT favorite Bagel

1 cup unbleached flour
1/2 c. wheat germ
1/4 c. grated parmesan cheese
1/2 teaspoon baking powder
1/8 tsp. garlic powder
1 large egg, lightly beaten
1/4 c. water

  1. Stir together the flour, wheat germ, parmesan cheese, baking and garlic powder in a medium mixing bowl. Add egg and water; stir until blended.
  2. Knead dough with your hands until smooth. The dough should be very stiff. (If the dough is overly moist add a little more flour. If the dough is too dry, add a little more water).
  3. Roll tablespoonfuls of the dough into small balls. Poke your finger through each ball and make a hole in the center. Flatten each bagel slightly. Place about 1" apart on a lightly greased cookie sheet.
  4. Bake in a preheated 350 oven for about 35 min. or until the bagels are lightly brown. Remove from oven and let bagels cool completely. Store in an airtight container in the refrigerator.
