Baked Cornmeal-Crusted Grouper Sandwich with Tartar Sauce

This is a good recipe as the fillets are real crunchy and so good. We have had this many times.

GROUPER:

1/2 cup yellow cornmeal
1/2 tsp. salt
1/4 tsp. ground cayenne pepper
1/4 cup milk
4 (6-oz.) grouper fillets
Non-Stick Foil

TARTAR SAUCE:

1/2 cup mayonnaise
2 Tbsp. chopped green onions
1 Tbsp. sweet pickle relish
1-1/2 tsp. capers
1-1/2 tsp. fresh lemon juice
1/2 tsp. Worcestershire sauce
Homemade hamburger buns

Preheat the oven to 450*F.

To prepare grouper, combine cornmeal, salt and cayenne pepper in a shallow dish, stirring well with a fork. Place milk in a shallow bowl.

Dip each fillet in milk, dredge in cornmeal mixture. Place fillets on a baking sheet lined with non-stick foil. Bake for 10 minutes or until fillets are done, turning once.

Prepare tartar sauce, combine mayonnaise and next 5 ingredients, stirring with a whisk.

Spoon about 2 Tbsp. tartar sauce over cut sides of each bun, place 1 fillet on bottom half of each bun. Top fillets with the top bun.

You can also put some cole slaw (if desired) on each fillet to give the sandwich an ever greater taste. Also serve with sliced tomatoes, lettuce and kosher dill spears, homemade country French fries
