Baked Eggplant Slices
1 medium eggplant, peeled and sliced 1/2 inch thick
1/2 C. mayonnaise
1/2 green onion, finely minced
1 C. soda crackers crumbs
1/2 C. grated Parmesan cheese
Sprinkle eggplant with salt, let stand for 20 minutes, pat dry.
Mix mayo and green onion and spread on both sides of eggplant. Mix crumbs and cheese. Dip slices into mixture.
Place on a cookie sheet and bake at 375 until golden, about 20 minutes.
