Baked Herb Vegetables

4-6 potatoes, peeled and diced in 3/4 - 1" chunks
1 lb baby carrots, sliced in half lengthwise
1 med onion, cut in half widthwise and then into wedges
2-4 TBSP butter, melted
garlic powder - to taste

Combine melted butter and garlic powder. Pour over vegetables and toss to coat well. Place in 7x11 or 9x13 baking dish, cover. Bake 1 1/4 - 1 1/2 hours - until done
