Balsamic Chicken w/ Mushrooms
2 teaspoons vegetable oil
3 tablespoons balsamic vinegar
2 teaspoons Dijon mustard
1 large clove garlic, crushed
4 4-ounce skinless chicken breast (1/4 inch thick)
3 cups small mushrooms, halved
1/3 cup chicken broth
1/4 teaspoon dried thyme leaves, crumbled
- In a large non-stick skillet, heat 1 tsp. oil.
- In a medium bowl, mix 2 tbsp. vinegar, the mustard, and garlic. Add
chicken, turn to coat.
- Transfer chicken and marinade to skillet. Saute chicken until cooked
through, about 3 minutes per side. Transfer chicken to platter and keep
- Heat remaining tsp. oil in skillet. Saute mushrooms for 1 minute. Add
broth, thyme, and remaining 1 tbsp. vinegar. Cook, stirring frequently,
until mushrooms are deep brown, about 2 minutes.
