Banana Bread

In medium bowl, mix together
2 bananas, chopped
2 eggs, beaten
In separate bowl, mix
1 3/4 cups All Purpose flour
1 1/2 cups granulated sugar
1 cup chopped nuts (walnuts or pecans)
1/2 cup veg. oil
5 Tb. buttermilk
1 tsp. baking soda
1 tsp. vanilla extract
1/2 tsp. salt
Add wet ingredients to dry just till combined (do not over-mix as it will create a dry bread).

Grease and flour a loaf pan and bake in a 325 degree, preheated oven for 70 to 80 minutes. Check for doneness with toothpick inserted into bread after 70 minutes (toothpick should be dry).
