2 cups all-purpose flour
1 cup Splenda/sugar Blend for cakes
1 teaspoon soda
1 teaspoon salt
1/2 cup margarine, melted
1 cup chopped walnuts, chopped
3 medium ripe bananas, mashed
2 large eggs, beaten
1 teaspoon pure vanilla extract
11/2 teaspoon pure banana extract
1/3 cup butter milk
11/2 teaspoon cinnamon
1 teaspoon nutmeg
Preheat oven to 350 degrees
Spray 18 muffins tins with a vegetable spray and also spray muffin paper liners.
In a large bowl mix the dry ingredients. Add margarine, egg and extracts. Fold in the mashed bananas and walnuts.
Bake at 350 degrees for 20 to 30 minutes or until golden brown. Test with a tooth pick until it comes out clean. Remove the muffins or loaf from the tins or pan and cool on a wire rack.
These are very yummy and very moist. Can also use Macadamia nuts.
