Banana Ricotta Chimichangas
2 very ripe bananas, peeled & diced
8 ounce pkg. of Ricotta Cheese
1/4 c. raisins
1/4 c. sugar
8 flour tortillas
1/2 c. chocolate sauce
1/2 pint of Vanilla Ice Cream
Cinnamon Sugar to Sprinkle on top
Mix together bananas, ricotta cheese, raisins and sugar. Lay out tortillas and spread out mixture evenly in center of each. Roll up each one like an egg roll. Use a wooden skewer to hold together. Deep fry until golden brown. Serve 2 to a plate with chocolate sauce drizzled on top, sprinkle with cinnamon-sugar and a scoop of vanilla ice cream on each one.
Serve at once. Serves 4.
