Barbecued Pork (Philippines)
3 lb lean pork butt
1/4 cup sesame oil
1/4 cup sugar
1/4 cup vinegar
1/4 cup soy sauce
1 garlic clove, if desired
7-Up or beer to taste (about 1/2 cup)
Cut pork into pieces or cubes (pieces cook faster). Season with garlic salt and pepper. Make a marinade of the next 6 ingredients. Pour over meat and marinate overnight or for a few hours.
An hour before cooking, thread meat through bamboo skewers and let stand for 20 minutes. Grill over coals until pork loses pink colour. Brush with marinade occasionally.
May be prepared in advance and heated in oven before serving. Soak your skewers in water for one hour before skewering meat.
