Beef Tenderloin

An all-time classic and crowd-pleaser, this recipe will make your guests swoon. Tender, juicy meat, seasoned lightly and served with a delicious, imaginative Herb Butter. With this meal, you cannot go wrong.

Serves 2

3/4-1 pound beef tenderloin, whole
2 tablespoons Herb Butter*
salt and pepper

Spicy Herb Butter*

Curry and chili sauce add an unexpected twist to this delicious herb butter. It’s wonderful paired with Beef Tenderloin, but really works well on its own served with a crusty baguette or Grilled Bread at the table. You can add or delete ingredients at will for this butter — that’s the beauty of it. Just taste your way to perfection.

8 tablespoons butter
2 tablespoons curry powder
1/2 cup chili sauce
2 garlic cloves, crushed
salt
1/2 tablespoon dried oregano
1/2 tablespoon dried basil
1 tablespoon Dijon mustard

Combine all ingredients. Chill until ready to serve.

Heat oven to 400 degrees.

Season tenderloin on both sides with salt and pepper.

Melt butter in a skillet. Add the tenderloin and sear quickly on all sides —
the crust should be a medium brown.

Transfer tenderloin to an oven-safe dish. Cook for about 20-25 minutes or
until done to your specifications. Ideally, meat should be about
medium-rare.
