Belle,s Sweet and Sour Beef Balls

1 lb.ground round
1 large egg
1 Tbsp. cornstarch
1 tsp. salt
2 Tbsp. finely chopped onion
1/8 tsp. freshly ground black pepper
1/4 cup oil
4 slices pineapple
2 large bell peppers, 1 yellow, 1 red, cut into lengthwise strips

Preheat the oven to 350*F.

Mix first 6 ingredients together and form into 18 or more small balls. Brown in oil quickly in a large skillet. Drain on paper towels.


1 Tbsp. vegetable oil
1 cup pineapple juice
3 Tbsp. cornstarch
1 Tbsp. soy sauce
3 Tbsp. vinegar
6 Tbsp. water
1/2 cup sugar

Over low heat cook oil and pineapple juice. Add mixture of cornstarch, soy sauce, vinegar, water and water and cook until the juice thickens. Stirring constantly.

Add cooked meatballs to sauce. Place in an 8-in. square baking dish and top with pineapple slices and bell pepper strips. Bake for 20 minutes.

This is excellent served with rice or noodles.
