Better Than Potato Salad
4 cups cooked long grain rice
8 radishes, sliced
4 hard cooked eggs, chopped
1 medium cucumber, seeded and chopped
2 cups thinly sliced celery
1-1/2 cups mayonnaise
3 tbsp prepared mustard
3/4 tsp salt
In a large bowl, combine rice, radishes, eggs, cucumbers, celery and onions. Combine mayonnaise, mustard and salt, mix well. Pour over rice mixture and toss. Cover and refrigerate at least 1 hour.
