Bird's Quiche

Okay…this…is the very very first recipe I ever collected back in the early eighties, named in honor of the friend I got it from. I’ve literally never made it without being asked for the recipe. This is new! I’ve never…NEVER put it online before but…here…I’ll make an exception. :o) Best wishes…Charlotte

1 - 9" unbaked deep dish pastry shell (or make your own)
1 - large can Hormel (no other brand) chicken
1 cup shredded Swiss, Monterey Jack or White cheddar cheese
3/4 cup mayonnaise (Hellman’s/Best Foods, depending on where you’re from)
1 tsp dried basil
1 - 10 oz. package choped frozen spinach thawed and squeezed dry
1/3 cup finely chopped sweet onion
2 eggs, beaten
3/4 cup milk
1/4 tsp pepper

Pierce pastry shell thoroughly with a fork. Bake at 375* for 10 minutes. In a large bowl, whisk together eggs, milk, mayonnaise and seasonings until smooth. In a separage bowl, chip well together chicken, cheese, spinach, and onion. Bake at 350* for 45 to 50 minutes, until brown. Cool at least 30 minutes before cutting. Good with muffins, fruit, green salad…hot, cold, or at room temperature.
