Bistro 301’s Mint Julep Cheesecake

3 cups graham cracker crumbs
1/2 pound (2 sticks) butter, room temperature
3 pounds cream cheese, room temperature
1-1/2 cups sugar
Pinch of salt
1 teaspoon mint extract
1 cup bourbon
1 teaspoon vanilla extract
6 eggs
1 cup sour cream

For the crust, mix together graham cracker crumbs and butter. Tamp the
mixture onto the bottom and up the sides of a 10- to 12-inch springform pan.
Set aside.

Heat oven to 350 degrees.

In the bowl of a mixer, add the cream cheese, sugar and salt. Cream the
mixture first at low, then at medium speed until light. Add the mint
extract, bourbon and vanilla, and continue beating. Add the eggs 1 at a
time, beating well after each addition. Stir in sour cream until
well-combined.

Pour batter into the prepared crust, and bake for 1 hour and 10 minutes, or
until the cake tests done in the center. Cool completely before carefully
removing the springform. Refrigerate; serve well-chilled.

Serves 10 to 12.
