Blackened Skirt Steak with Cheddar Sage Mashed Potatoes

1 tsp. pepper
1 tsp. paprika
1 tsp. garlic powder
1/2 tsp. dried thyme
1/4 tsp. salt
1 lb. skirt steak, cut into 4 equal pieces
1 Tbsp. oil


1-1/3 cups milk
1 tsp. dried sage
2 2/3 cups frozen mashed potatoes
1/2 cup Cheddar cheese

Combine pepper, paprika, garlic powder, thyme and salt. Rub 1/2 tsp. on each side of each piece of steak. Heat the oil in large skillet over high heat. Add steak, cook 2 minutes on each side for medium rare.

Meanwhile make potatoes, heat the milk and sage in a medium saucepan over medium-high heat. Stir in frozen potatoes and cook stirring occasionally, 4 minutes or until hot. Remove from the heat stir in cheese.

Serves 4
