Blender Banana Bread

Makes 1 loaf
Preparation time: 10 minutes
Cooking time 1 hour

Old bananas at least have one good use. Pop them in the freezer whenever you notice they have become over-ripe in the fruit bowl. Thaw and bake them into a loaf to send in to the office, the schoolyard or serve with cups of tea.

Ingredients

5 overripe bananas
1/4 cup milk
2 tablespoons golden syrup (or light corn syrup)
1 teaspoon vanilla extract
1 squeeze lemon juice (1/4 tsp)
2 cups wholemeal flour (whole wheat flour)
1/2 cup soft brown sugar
1/2 cup sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 teaspoon ground nutmeg

Method
Preheat oven to 180C (350F).
Line a loaf tin with baking paper.
Place bananas, milk, syrup, vanilla and lemon juice in blender and whizz until liquid.
Pulse in the flour, sugars, baking soda, cinnamon, baking powder and nutmeg.
Spoon into prepared loaf pan. Bake for 1 hour.
