BLT â€“ BACON & LETTUCE STUFFED TOMATOES
20 cherry tomatoes
1/4 C chopped green onion
10 slices bacon, cooked & crumbled (see my note at end)
1/2 C finely chopped lettuce
1/3 C mayonnaise
Salt & freshly ground pepper
Cut off the top of each tomato. Scoop out the pulp & seeds.
(a melon ball maker works well for this). Salt the inside of each
tomato & invert tomatoes on paper toweling. Drain for 15 min.
In a small bowl, combine remaining ingredients. Fill each
tomato with mixture.
Don’t stuff these until an hour or two before serving and keep
refrigerated until serving.
