Blueberry Pancake Muffins

Blueberry Pancake Muffins

1 cup flour
1 Tbsp baking powder
1 egg
1 cup warm milk
3 Tbsp maple syrup
1/2 cup blueberries
Dash of salt

Combine all ingredients in a medium bowl and mix until just combined. (Don’t overmix!) Drop by spoonfuls into muffin tins. Bake at 375 F for 20 minutes.

If you use mini-muffin tins, bake only 10 minutes)
