Boiled Mudbugs ( Crayfish)

1 gallon of mudbugs ( or as many as you have)
2 bay leaves
1 Tblsp caraway seed
1 Tsp. celery seed
2 chili peppers, chopped
1 Tblsp salt
1 Tsp. vinegar
1/2 Tsp. oragano

After catching the mudbugs, keep them alive in a pail of water. When ready to cook, pour them in a pail of lukewarm strongly salted water to clean them. Then:
To a pot of boiling water add all the ingrediants then:
Add about 1 gallon of mudbugs ( or as many as you have) of the live crayfish. Boil until they are a bright red. Pour off water and serve.

To eat mudbugs, break off the tail center fin, which should remove the intestine. Remove from shell and eat as is or dip in melted butter.
