Braised chicken feet stew with mushrooms


10 pieces chicken feet
4 dried chillies
spices - 2-3 cinnamon sticks, 1 star anise and 2 cloves
1 inch ginger - sliced thinly
5 garlic - sliced thinly
1 can (400g) button mushrooms - drained out the water
Oil as needed
spring onions for garnishing

For the Seasoning
2 tbsp oyster sauce
1 tbsp thick soy sauce
1 tbsp light soy sauce
1/2 tbsp brown sugar
1/2 tbsp sesame oil


Deep fry the chicken feet in hot oil until brown in color all over
Remove, rinse under running water until the oil is removed.
Soak in water for halt and hour and drained.
Heat 2 tbsp of oil and when heated, fry the ginger, dried chillies and spices for 1-2 mins.
Add in chicken feet and pour about 1/2 liter of water.
Once heated throughly, add seasoning.
Simmer over low heat until the feet is tender and gravy is reduced.
Add the mushrooms and continue to simmer for another 3-4 mins.
Remove and garnish with spring onions before serving.
