Bran Muffins

Here is a great reciepe for Bran Muffins. This makes a very large batch so make sure to use a LARGE bowl to mix. With this receipe you can keep the batter in the fridge for up to 1 week before baking all of the mixture

2 cups boiling water
3 cups white sugar
4 eggs
3 tablespoons baking soda
1 quart buttermilk
2 cups raisins
1 cup shortening
2 cups all bran
1 teaspoon salt
5 cups flour
4 cups bran flakes

Pour boiling water over all bran, shortening, and sugar. Add eggs and beat well. Sift salt, baking soda and flour.
Add buttermilk to mixture and stir until mixed. Add dry ingredients and beat well. Add bran flakes and raisins and stir untill mixture is moist. Store in a cool place for at least 24 hours before baking. Give mixture a quick mix before placing into muffins tins. Bake at 400F for 15 to 20 minutes or until a toothpick inserted into the muffin comes out clean.
