Bravo Italiano Restaurante Meatballs

5 ounce Ciabatta Bread
5 oz Buttermilk
10 oz eggs
2.5 oz Celery
3 oz Yellow Onion
2.5 tbsp Parsley
4 oz Parmesan Cheese
1 tbsp Salt and Pepper
1.75 lb Ground Beef
.75 lb Ground Sausage

Soak 1/2 inch diced ciabatta bread in buttermilk for 5 minutes. Add eggs and
place in food processor. Add all other ingredients except meat and pulse
until smooth.

Place meat in mixing bowl. Add pureed mixture and hand mix thoroughly. Allow
to sit in fridge for 2 hours. Scoop and shape into balls. Place on sheet
tray into oven at 350 degrees for 20-25 minutes, or until internal
temperature reaches 165 degrees.
