Bread Machine Yeasted Corn Bread

It’s normal for the top of this loaf to cave in / fall slightly (1/2 an inch)
while baking. This makes a dense loaf of slice-able corn bread.

1 cup warm milk or warm buttermilk (100 F to 110 F)
1 egg, beaten
1/3 cup white granulated sugar (or less to taste)
1 1/2 teaspoons table salt
1/3 cup butter, softened
1 1/2 cups yellow cornmeal
2 1/2 cups all-purpose flour
2 1/4 teaspoons (or 1 packet) bread machine or instant yeast

In a bowl, mix the first five ingredients together and then stir in the cornmeal, stir out any lumps.

Add cornmeal mixture to the bread machine.

Add the flour and yeast to the bread machine.

Set the bread machine to Basic or White Bread cycle, 2 lb loaf, medium crust.

Press Start.

In the first few minutes of kneading, adjust the dough so that it is smooth and not sticky or crumbly by adding flour or water a tablespoon at a time, as necessary.

Makes one 2 lb loaf of Yeasted Corn Bread.
