Bread Pudding with Bananas Foster Sauce
4 large eggs
1-1/4 cups sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon freshly grated nutmeg
2 cups milk
2 cups whipping cream
3 tablespoons rum
2 tablespoons vanilla extract
1 (16-ounce) loaf French bread, cubed
Powdered sugar
Whipped cream
Bananas Foster Sauce
- Whisk together eggs, sugar, cinnamon and nutmeg in a large bowl
- Gradually whisk in milk, whipping cream, rum, and vanilla
- Add bread cubes, tossing to combine
- Pour mixture into a lightly greased 13- x 9-inch baking dish
- Bake at 375°F for 45 minutes or until set, shielding with aluminum foil to prevent excessive browning
- Sprinkle pudding with powdered sugar
- Serve warm pudding with sweetened whipped cream and Bananas Foster Sauce
Bananas Foster Sauce
1 cup firmly packed light brown sugar
1/4 cup butter
1/4 cup whipping cream
2 tablespoons rum
1 teaspoon vanilla extract
2 large bananas
- Slice bananas on the diagonal into 1/4-inch thickness
- Set aside
- Stir together brown sugar, butter, whipping cream, rum, and vanilla in a medium skillet over medium-high heat
- Cook 5 minutes, stirring constantly
- Mixture will bubble up as it caramelizes
- Stir in bananas
- Serve over warm bread pudding
