Breakfast Casserole


6 large eggs
2 cups milk
1 teaspoon dry mustard
4 slices bread, toasted and cut into cubes, about 2 to 3 cups.
1 lb. breakfast sausage, browned and crumbled
1-1/2 cups grated sharp cheddar cheese.
salt and pepper to taste.

Grease a 9X13 inch baking dish. Line bottom with cubed toast. Sprinkle cooked sausage over bread, then with grated cheese. Beat eggs with milk, salt and pepper. Pour over the toast, sausage, and cheese. Cover tightly with foil. Refrigerate overnight. Bake in 350 degree oven for 45 to 50 minutes until egg is set and it is lightly brown. Let sit for about 5 minutes before serving.

Add cooked bacon, Use a mixture of cheeses, Use egg substitute, add cooked onions and/or green peppers.
