16 (1/2 inch) slices crusty French or Italian bread
4 large eggs
2 cups milk
1/2 cup freshly grated Parmesan cheese
2 tsp Dijon mustard
1/4 tsp salt
1/4 tsp freshly ground pepper
4 scallions, thinly sliced
4 oz sliced bacon, cooked crisp, crumbled
1 ripe medium tomato, cored, seeded, chopped
Butter a 1 1/2 qt. shallow baking dish; then arrange bread slices in bottom of dish
Whisk eggs, milk, Parmesan, mustard, salt and pepper in a bowl until smooth. Pour egg mixture over bread and press bread into mixture. Let stand at least 15 minutes or refrigerate covered overnight.
Heat oven to 350F
Sprinkle scallions over top of bread. Bake 25 mins. Scatter bacon and tomato over scallions and continue baking until puffed and edges are golden, about 10 mins. longer. Let stand 5 mins. before serving.
