Broccoli Cheese Soup gets thin when cools off

My Broccoli Cheese Soup gets thin when it begins to cool off and I don’t know how to fix it. It starts out really creamy and thick almost like a chowder but as you begin to eat it …it gets thin. It has a milk and chicken broth base.

I just made a pot of cheddar broccoli soup yesterday. I always use a roux and I make it fairly tight. I’ve never had a problem with thinning. Instead of using milk I’d use half and half for the cream part.

Just add a few instant potatoes and that will thicken it.
