Broccoli Lovers Casserole
2 package (10 oz) frozen chopped broccoli, drained
2 cup round butter flavored crackers, crushed
1/3 cup butter, melted
1/4 cup onion, grated
3/4 cup mayonnaise
1 can (10 1/2 oz) cream of mushroom soup
2 eggs, beaten
1 1/2 cup cheddar cheese, shredded
Place frozen broccoli in microwave safe dish and microwave on high power 5-6 min. until defrosted. drain. set aside.
Combine crackers and melted butter. place 1/2 of the crackers in the
bottom of a 10 oz quiche dish or pie plate. combine broccoli with
remaining ingredients. Mix well and pour over the prepared cracker
base. top with remaining crackers.
Bake at 350 for 25 minutes to 30 minutes.
