Burnt Sugar Pie

1 - 8 inch pie crust, baked

Filling

1 1/4 C. granulated sugar
1 C. boiling water
3 T. all-purpose flour
2 egg yolks
evaporated milk

Meringue

2 egg whites
1/4 tsp. salt
6 T. granulated sugar
1 tsp. vanilla extract

Prepare filling: Place 1/2 C. sugar in a heavy iron skillet over low heat. Carefully heat sugar until it is melted and golden brown.

Add boiling water. Simmer mixture until sugar is dissolved.

In a bowl, mix remaining 3/4 C. sugar, flour, and egg yolks with enough milk to form a paste.

Stir the paste into the sugar mixture and cook until it is thick (like pudding), stirring constantly.

Cool the mixture, then pour it into the baked pie shell.

Prepare meringue: Beat egg whites until stiff, but not dry.

Add salt, vanilla extract and sugar gradually, beating constantly.

Swirl the meringue on the pie and bake at 350 for 20 minutes.
