There are favorites of my son and his buddies. He graduated from high school this year, but these things are like a magnet…when I make them, kids appear! It’s been that way since he was about six years old!
BUTTERMILK BROWNIES
1 cup butter (no substitutes)
1 cup water
1/3 cup cocoa
2 cups flour
2 cups sugar
1 tsp. baking soda
1/2 tsp. salt
1/2 cup buttermilk
2 slightly beaten eggs
1 1/2 tsp. vanilla
COmbine butter, water and cocoa. Cook and stir until mixture boils. Remove from heat and set aside. In a bowl, stir together flour, sugar, soda and salt. Add buttermilk, eggs and vanilla. Beat until smooth. Sir batter into hot cocoa mixture. By hand, stir until well combined. Pour into oiled and floured jelly roll pan (15 x 10). Bake at 375 for about 20 minutes. Watch carefully and reduce heat if the edges start to brown too quickly, compared to the middle.
CHOCOLATE MARSHMALLOW FROSTING
1 cup brown sugar
1/4 cup milk, cream or half 'n half
1/2 stick butter (4 TBSP)
1 handful of small marshmallows
pinch of salt
Boil the above 1 minute, then add:
1 tsp vanilla and 1 cup chocolate chips (semi-sweet or milk chocolate work the best).
Cool, beat a little and spread on cooled brownies.
