Buttermilk Oven Fried Chicken
1/2 cup buttermilk
2 or more drops Tabasco sauce
16 ounce. skinned & boned chicken breast halves
COATING:
1/2 cup crushed cornflakes
3 tablespoon all purpose flour
1/4 tsp. salt
1/8 tsp. black pepper
4 tsp. olive oil
Preheat oven to 400* F
Spray a baking sheet with Pam.
In a large shallow dish combine the buttermilk & tabasco; add the chicken,
turning it to coat with the buttermilk.
Marinate in the fridge for 1-2 hours. Turn chicken over frequently.
Combine the reamining ingredients except the oil, place on a sheet of waxed
paper or on a large plate.
Drain the chicken, coat each side with the crumb mixture; place on prepared
pan.
Drizzle 1 tsp each of the oil over each breast,
Bake for 30 minutes, turn chicken over & continue to bake for another 10
minutes.
