butternut squash soup

peel and dice one butternut squash
1/2 stick unsalted butter
1/4 cup brown sugar
1/2 teaspoon nutmeg
1 tsp. salt
1 quart of cream (you can use half & Half or whole milk)
1 cup chicken broth or one can

melt butter mix with brown sugar and spices. Toss this mixture with uncooked squash. Spread out even on a cookie sheet. Cook at 350 until tender and slightly browned apx 30-45 minutes.

In a food processor or blender put in squash and cream blend until creamed. Awsome on a fall or winter evening. :lol:
