Cajun Baguette Burgers
More like a sandwich than a burger, but that is okayâ€¦right?
2 tablespoon olive oil
1/2 red onion, thinly sliced
1/2 each green and red bell pepper, seeded and thinly sliced
1 large clove garlic, minced
2 tablespoons Cajun seasoning
1 pound lean ground beef
1 fresh baguette, cut into 4 equal pieces
Heat the oil in a large skillet. Add onion and bell pepper and sautÃ© for about 5 minutes until veggies are wilted and starting to take a little color. Add the garlic and Cajun seasoning and cook for 2 more minutes. Remove from heat and keep warm.
Form 4 patties in a rectangular shape the width of the baguette and grill to desired doneness.
Toast the baguettes and spread with a bit of the mayonnaise. Place the burgers on top and place a generous amount of the veggies on top. Cover and serve.
