Caramel Corn In The Microwave

1/2 cup popping corn
1/2 cup corn syrup
1/2 cup brown sugar
1/4 cup butter
1/2 teaspoon baking soda
1 teaspoon vanilla (optional)

Pop 1/2 cup popping corn in the hot air popper and keep warm.

In a glass dish place 1/2 cup corn syrup, 1/2 cup brown sugar and 1/4 cup butter. Microwave on High for 2 minutes. Stir.

Microwave on High for another 2 minutes. Remove and add 1/2 teaspoon baking soda and at this point you can add 1 teaspoon vanilla (optional).

Mix and pour sauce over popped corn in dish.

Place sauced popcorn back into microwave and cook on High for 1 minute. Mix.
