Caramel Delight Cookies

2 sticks (1 cup) butter or margarine
2 eggs
2 tsp. vanilla
1 cup granulated sugar
1 cup brown sugar
2 1/2 cups flour
3/4 cup cocoa
1 tsp. baking soda
1/2 cup chopped pecans
40 Rolo™ caramels

—TOPPING—
1/2 cup chopped pecans
1 tbsp. sugar

  1. Preheat oven to 350 degrees.

  2. In a large bowl, cream butter or margarine, eggs and vanilla. Beat in sugars until fluffy. Add flour, cocoa and baking soda; blend well. Stir in pecans.

  3. Shape one tablespoon of dough around one Rolo" caramel, making sure it’s completely covered.

  4. In a small bowl, combine the 2 topping ingredients. Press one side of each ball into the topping mixture and place nut side up on an ungreased cookie sheet. Bake for 10 minutes.
