Recipe Name: CARAMELIZED GARLIC
6 heads fresh garlic
2 tables olive oil
Lay each garlic head on its side and cut off 1/4 inch from the bottom or root end, exposing the garlic cloves. Brush with the oil. Place the heads, cut side down, in a single layer in a double thickness of aluminum foil. Wrap up the foil tightly. Grill, uncovered, over low heat, for 10-20 minutes, until garlic becomes creamy. Remove from heat. Allow the garlic to cool. Remove the softened cloves from the head. You may store this in a tightly covered container in the refrigerator for up to 3 days. To puree the garlic, simply crush the cloves with the flat blade of a sharp knife.
NOTE: This may also be prepared in your oven or under your broiler.
