Here is a good dinner idea. Caramelized onion chicken, sautéed green beans, roasted garlic mashed potatoes, or rice, crusty French bread or cornbread, iced tea, Fuzzy Navel Cake.
1 lb. chicken breast tender,s
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
1 tsp. olive oil
1/2 cup sliced onion
1/2 cup seedless raspberry jam
1 Tbsp. red wine vinegar
1 Tbsp. low-sodium soy sauce
1 tsp. bottled minced ginger
1/2 tsp. dried rosemary, crushed
Sprinkle chicken with salt and pepper. Heat oil in a large nonstick skillet. Add onion and sauté for 2 minutes. Add chicken and sauté 8 minutes or until chicken is done. Remove onion and chicken from pan.
Add jam and remaining 4 ingredients to pan and cook 2 minutes, stirring constantly with a whisk. Return chicken mixture to pan, cook 4 minutes, stirring occasionally.
