Caramelized Vidalia and Brie Burgers

Ingredients:

Caramelized Vidalia Onions:

1 large sweet Vidalia onion, halved and thinly sliced
1 tablespoon fresh garlic, minced
1 tablespoon canola oil
2 tablespoon beef broth
1 tablespoon dark brown sugar
fresh ground black pepper to taste

Burgers:

1 pound fresh ground beef, formed into 4 patties
8 ounces of triple cream Brie
4 Kaiser rolls, toasted
fresh salad greens

To caramelized the onions, sauté the onions and garlic in the oil until onions wilt and start to take on color. Add the broth, sugar and pepper and cook over medium heat until nearly all the liquid has evaporated. Keep warm.

Put your burgers on the grill and then slice your Brie into thin even slices. Note: The rind on brie cheese is completely edible. The soft white coating is there to protect the cheese during the ripening process.

When the burgers are almost done to your satisfaction, top with the warm onions and sliced brie. The brie should soften quickly. Serve on toasted rolls topped with salad greens.
