Caribbean Chicken Nachos


5 cup deli rotisserie chicken-any flavor
1/4 cup fine chopped red onion
1 garlic clove finely chopped
1 tsp thyme
1 tsp all spice
1 large bag of tortilla chips
16 oz Pepper Jack cheese-may use Monterey Jack or 8 oz of both
1-20 oz can pineapple tidbits-drain well
2 T parsley-optional

Preheat oven 350. In a bowl toss chicken, onion, garlic, thyme, & allspice. Spread chips on a large baking sheet. Sprinkle with chicken mixture. Sprinkle on pineapple. Top with cheese. Bake 5 min until cheese melts. Sprinkle on parsley. Serve hot.

**You can substitute 2 mangos for the pineapple.
