Carrot Walnut Muffins
3/4 Cup granulated sugar
3/4 cup dark brown sugar
1-1/4 Cups olive oil
4 eggs
2 Teaspoons vanilla
3 Cups all-purpose flour
2-1/2 Teaspoons cinnamon
1/2 Teaspoon salt
2 Teaspoons baking powder
3 Cups shredded carrots
3/4 Cup chopped walnuts
Preheat oven to 350°F.
Line a muffin pan with muffin liners Spray exposed parts of the pan.
Blend all batter ingredients except walnuts. When batter is blended fold in
walnuts.
Spoon evenly into muffin pan.
Bake at 350°F 25-30 minutes.
