CASHEW AND MUSTARD SEARED SEA BASS

Cashew and Mustard Seared Sea Bass

Four 5 oz. pieces Sea Bass
1/4 cup seafood seasoning spice*

1/4 cup All-Purpose flour

3/4 cup cashew nuts, ground

1/2 cup prepared mustard

1/2 cup peanut oil for frying

1/2 cup breadcrumbs

2 eggs, beaten

Preheat oven to 400°

In a bowl, combine seasoning mix with flour.

In another bowl, combine cashews and breadcrumbs.

Roll the fish first in mustard, second in the flour mixture, third into beaten eggs, and finally into the cashew and breadcrumb mixture.

Sear the encrusted fish in hot oil until golden brown on both sides.

Place in a 400° oven and bake approximately 10 minutes.

*To make your own seasoning combine equal amounts coriander, curry powder, cumin, paprika, ground thyme, ground garlic, sage, chili powder, dry mustard, dry ginger, cayenne pepper, salt and black pepper.

This is good with Coconut Rice as a side dish.
