Spinach Quiche

2 (8?) pie shells uncooked
2 eggs
1 envelope dry onion soup mix
3 Tbsp. flour
2 (9oz.) packages frozen creamed spinach
1/2 lb. boiled ham or cooked crumbled bacon
1/2 lb. grated swiss cheese
2/3 cup half & half

Preheat oven to 375°.

Combine soup mix with flour. Add thawed spinach, ham or bacon, 1 cup cheese. Mix well.

In small bowl, mix eggs & cream. Mix egg mix with spinach. Spoon into pastry. Top with remaining cheese.

Bake 45 minutes or until knife comes out clean. Makes 2 quiches. Freezes well.

Sinfully Easy Chicken and Rice Casserole

1 Family Sized Can of Cream of Chicken Soup
1 Box of White Minute Rice
Milk

Canned Cooked All-white Chicken Breast (or you can use your own chicken or rotisserie)

In a large bowl, dump out the soup. Fill the empty soup can full of white
rice and pour into mixing bowl with soup. Fill the can 2/3 full with milk
and add to mixture. Add your cooked chicken and a little salt and pepper to
taste. Mix well. Pour into casserole dish and bake at 350° for 30-40
minutes.

Note: This is what I take to new moms and people who are not feeling well.
It is really mild, but extremely tasty! Also, this is one of my kids?
favorites.

Messy Potatoes

2# frozen hash browns, thawed (I like the shredded kind)
16 oz. sour cream
1 can cream of onion (or celery or mushroom) soup
1 1/2 c. sharp cheddar, shredded
1/2 c. softened butter
1/4 tsp. pepper
1 tsp. salt
1/2 c. ritz cracker crumbs

Mix all together except Ritz crackers and place in greased 9x13 pan.
Sprinkle cracker crumbs on top.

Bake 40 minutes at 350°.
