Cheddar Hashbrown Omlet

2 c. frozen shredded hashbrowns thawed 1/2 c. chopped onion 1/2 c. chopped green pepper 2 T. butter 1 c. diced ham or polish sausages 6 eggs 1/4 c. milk 1/4 t. pepper 1/4 t. salt 1/2 c. shredded cheddar cheese

In a 10 inch nonstick skillet saute onions , green peppers, and potatoes in butter until tender. Sprinkle with ham. In a bowl beat eggs, milk, pepper and salt, add to Skillet. As eggs set lift edges, letting uncooked portion underneath. When eggs are set remove from heat , sprinkle with cheese and fold in half. Cover let cook 1 minute or until cheese melts.
